This is my absolute favorite time of the year and I have truly enjoyed the holidays.  Wish I had a reverse button to start at Thanksgiving again.  As much as I love to see Christmas come, I hate to see it go as well. There is just something about the music, the reverence of the birth of Christ, the cooking and the family and friends gathering that just thrills me. We have wonderful family traditions and things we do for our neighbors.

One of those traditions is to bake pies.  Every Christmas when my kids were little we would go in the kitchen and bake pies for the neighbors and deliver them. It was a blast. We always did it at night which made it more special because we got a chance to drive around the neighborhood and see all the glimmering Christmas decorations. It did not matter what the whether was – rain, snow, sleet or freeze your toes off cold we would do our “Pie Patrol.” Now years later and they are grown, yet the tradition still continues. I got that tradition from my mother, who got it from her mother and on and on. Makes me happy that my kids got it too. My daughter even stepped it up a notch. She started an organization called Apples, and for Christmas all of us and her team delivered 30 backpacks filled with all kinds of wonderful tolitries and supplies for homeless people. We walked the streets delivering the backpacks and it was such a rush. My husband and I were over joyed because the tradition lives on in a new diminsion. Here is an easy holiday recipe from our Pie Patrol, enjoy and Merry Christmas!

Easy Holiday Recipe

This is a fantastic pie recipe for the Christmas season.

Fabulous Cranberry Apple Pie

4-6 apples, chopped

1 cup dried cranberries

1 tbs. cornstarch + 1 tbs. water, blended

½ can of apple juice, concentrate

½ tsp. cinnamon or cardamom

½ tsp. nutmeg

½ tsp. ginger

¼ cup orange juice concentrate

2 piecrusts

Pour apples and cranberries in a pan with a little water. Heat until apples are softened. Add the remaining ingredients and heat until thickened. Pour into piecrusts. Bake at 350 degrees for 35 minutes, or until the crust is golden brown.
